I like your thinking, I predict that you'll go far in your career because you are thinking about how to improve your outcomes.
However, in my 20 years of experience, it's almost impossible to tell what the job will actually be like during the interview process. It doesn't matter the questions you ask at the interview (the interviewer can lie/not know/not be aware) or the research you do or the people you talk to, the only way to know what the job/team/company is like is to start working there.
It sucks that there is so much uncertainty with jobs, but that seems to be the inherent chaotic nature of people/jobs/companies. Just pay attention and be ready to quit after a few weeks if the job turns out to be terrible, that's my advice. Be ruthless for the sake of your own mental health and career, don't think you can fix any job. team or company, instead find a job that suits you. I speak from hard experience.
